Instructions to make Sweet Corn Soup with Olive and Jalapeno:
  1. Chop onion and garlic thinly.
  2. Heat 2 tablespoons of olive oil in a saucepan and add in chopped onion and garlic.
  3. Cook in medium heat for a minute or until onion changed it's colour to pink.
  4. Add in sweet corn, whole black peppers and salt.
  5. Saute for a couple of minutes and then add in 3 cups of hot water and bring to boil.
  6. In the meantime roughly chop olives and jalapeño (deseeded). I used some red pepper stuffed olives. You can use any variety.

  8. Cover and simmer for about 10 to 12 minutes.

  12. When the soup comes to a boil, remove from heat and transfer to soup bowls.
  13. Garnish with some blanched sweet corn, red bell peppers and olive slices.
