Don't overcrowd the cooking base, a couple of medium sized chops per pan. No need to oil the chops or the cooking. Tips To make Best Mutton chops: Quality-Meat: The taste of the mutton chops depends on the quality of the meat. Getting fresh tender Lamb/mutton pieces to gives you greater taste.

Instructions to make Mutton chops:
  1. Wash and marinate chops with chilli powder, turmeric powder, salt, lemon juice and keep for 30 mins.
  2. In a pressure pan add marinated chops, bay leaf, clove cinnamon add 1cup water and cook in high flame. After the 1st whistle reduce flame and cook for 10min, remove and let it cool
  3. In a bowl beat the eggs, add ginger garlic paste, garam masala, pepper powder and corn flour, mix until well blend.
  4. Keep a pan, add oil, dip and roll the chops in egg mixture and shallow fry in medium flame both the sides until golden brown.
  5. Boil the broth separately with 1tbs soya sauce until thick consistency, spread over the fried chops.
  6. Serve hot with sweet chilli sauce.

Gingelly oil- I used gingerly for this recipe, you could also use peanut oil. The mutton pieces are wells sauteed and roasted in gingerly oil that gives you the mega. Dry roast the besan (gram flour) in a pan till it turns brown. Sprinkle the besan on the marinated chops. This will make the chops more crunchy.
