Don't overcrowd the cooking base, a couple of medium sized chops per pan. No need to oil the chops or the cooking. Tips To make Best Mutton chops: Quality-Meat: The taste of the mutton chops depends on the quality of the meat. Getting fresh tender Lamb/mutton pieces to gives you greater taste.

- Merinate chops and keep over night or at least 4_5hrs for best results.
- If you want to make fried chops then first steam it by putting these chops in a big pot with I cup water. When boil comes cook on low flame till tender and bhunefy them till dry then take them out and fry as it is or dip in egg and fry or coat in eggs and bread crumbs or maida or besan.
- After steaming you eat as it is. It's very tasty like this
- Or make chop masala like mine as follows
- Fry chopped onion add zeera till golden colour (not brown).
- Add ginger garlic paste 1TSP cook and add meri ated chops fry for a few minutes and add some water cook for 10 minutes
- Add 2 tomatoes chopped
- Cook on slow heat covered till tender
- Fry (bhun lein bht achi tarha)
- Add Green chillies and coriander
- Bhunai bht achi tarha karen.
Gingelly oil- I used gingerly for this recipe, you could also use peanut oil. The mutton pieces are wells sauteed and roasted in gingerly oil that gives you the mega. Dry roast the besan (gram flour) in a pan till it turns brown. Sprinkle the besan on the marinated chops. This will make the chops more crunchy.
