The ingredients needed to make Mutton Palao:
  1. Prepare 3 sliced onions
  2. Get 2 tbs ginger garlic paste
  3. Prepare 4 tbs oil
  4. Prepare 2 tbs cumin seeds
  5. Get 750 g mutton
  6. Prepare 2,3 tbs salt to taste
  7. Get 3 cups white basmati rice soaked in water for 25 min
  8. Prepare whole spices in potli
  9. Take 7 cloves
  10. Prepare 2 tbs coriander seeds
  11. Prepare 3 tb black pepper
  12. Take 7 green cardamom
  13. Prepare 1 bay leaf
  14. Take 2 black cardamom
  15. Take 1 cinnamon stick and star
Instructions to make Mutton Palao:
  1. Heat the oil in a deep pan. Add sliced onions, saute well. Stir until evenly brown.
  2. In a deep golden brown add ginger garlic paste, cumin seeds and mutton. Saute well for a few minutes.
  3. Add 7cups of water. Take all whole spices in a cloth and make a potli. Add salt
  4. Allow this to simmer on low heat for 1 hour 30 min. Add rice. Make sure 6.5 cups water and tender mutton.
  5. Cook this on high flame. Stirr once or twice
  6. Once water is evaporated and rice still look moist, turn the flame to lowest level. Cover tightly, allow the rice to dry. Dum in urdu for 10 minutes
  7. Lift the lid and fluff up the rice.
  8. Garnish with onion or coriander leaves and serve with yoghurt raita.
