- Prepare 3 sliced onions
- Get 2 tbs ginger garlic paste
- Prepare 4 tbs oil
- Prepare 2 tbs cumin seeds
- Get 750 g mutton
- Prepare 2,3 tbs salt to taste
- Get 3 cups white basmati rice soaked in water for 25 min
- Prepare whole spices in potli
- Take 7 cloves
- Prepare 2 tbs coriander seeds
- Prepare 3 tb black pepper
- Take 7 green cardamom
- Prepare 1 bay leaf
- Take 2 black cardamom
- Take 1 cinnamon stick and star
Instructions to make Mutton Palao:
- Heat the oil in a deep pan. Add sliced onions, saute well. Stir until evenly brown.
- In a deep golden brown add ginger garlic paste, cumin seeds and mutton. Saute well for a few minutes.
- Add 7cups of water. Take all whole spices in a cloth and make a potli. Add salt
- Allow this to simmer on low heat for 1 hour 30 min. Add rice. Make sure 6.5 cups water and tender mutton.
- Cook this on high flame. Stirr once or twice
- Once water is evaporated and rice still look moist, turn the flame to lowest level. Cover tightly, allow the rice to dry. Dum in urdu for 10 minutes
- Lift the lid and fluff up the rice.
- Garnish with onion or coriander leaves and serve with yoghurt raita.
