You don't need to add water, mangoes will release its water content and the pickle will cook in that water itself. M y Punjabi aunty gave me lots of raw mangoes. Instructions to make Grated raw mango pickle:
  1. Wash and peel and grate the raw mango.
  2. Add salt and mix well
  3. Heat oil in a pan.
  4. Add black mustard seeds and asafoetida.
  5. Let it cool down a beat till warm.
  6. Then add turmeric powder,red chilli powder and roasted fenugreek powder and then pour this on the grated mango.
  7. Mix well and let it cool completely.
  8. Pour in the glass jar and keep in the fridge.
