  1. First wash and dry the chillies then chopped chillies into two parts then chopped the carrot as per your choice and chopped mango then dry in the sun for 3-4 hrs
  2. Then roast the all whole masala then grind it(dardara)
  3. Heat the oil in a pan add carrot, turmeric powder saute for 30 sec in high flame then after cover it with lid for 3-4 min in slow flame
  4. Then take a bowl add oily masala of carrot, dry chopped chillies and dry chopped mango add whole masala grinded powder, red chillies,salt and vinegar then mix it well together
  5. After that pour the pickle into a air tight container jar kept in under sun for 2-3 days
  6. Carrot,chilli mango pickle is ready to eat
  7. Raw mango, carom seeds is optional
  8. For preservatives of this pickles add extra 2-3 tbsp oil in a jar to stay and enjoy long time
  9. Vinegar / lemon juice is another option for preservatives
