- And spread these karela slices on to some cotton cloth to dry.
- It takes at least 3-4 hours to dry them. These slices should be very dry. There should not be any water left in the slices.
- Take a pan put mustard oil in it and bring it to smoky hot.
- Switch off the heat. Cool down the oil a little bit. Add turmeric powder to it. Then add asafetida. Mix it well.
- Then add karela slices to it. Mix it well.
- Add sliced or grated raw mango to it.
- Add kashmiri red chilli powder and salt to taste.
- Mix all the ingredients together very well.
- Now fill the karela achar in a glass bottle.
- You can eat this achar straight away.
- But you will get the proper flavor and taste of the achar by keeping this achar in sun for 2-3 days.
