Add the onion/ginger mixture on top. Add the chicken back to the wok along with the green onions and peas. Sprinkle over with ginger shreds, spring onions and red chilli. Remove from the heat and discard spring onions.

  1. Slice chicken breast into small pieces, marinate for 10mins (or while you are cutting the other ingredients) in cornflour, dark soy sauce, light soy sauce, chinese rice wine and sesame oil.
  2. Slice a thumbsized piece of ginger into thin strips, chop 2 cloves of garlic, slice 4 stalks of spring onions. Heat sesame oil in pan and fry ginger till fragrant, add chicken and garlic, and a splash of water. Stir fry till chicken is cooked through. Add spring onions and sprinkle toasted white sesame seeds on top.
