- Take 5-6 curry leaves
- Prepare pinch Asafoetida

- Get all the ingredients ready
- Firstly, make oats powder. For this, roast oats in a pan well until they become crispy and grind them in a mixer to make a fine powder
- Take 3 tablespoons of oil in a pan. Heat well. Add a teaspoon of mustard seeds, followed by cumin seeds, a pinch of asafoetida, crushed ginger and curry leaves.
- Next add chana and urad dal. Here I forgot the step so I fried the ingredients separately and added to the pan
- Add chopped chillies, grated carrot and chopped capsicum and turmeric powder to the pan. Saute well
- Next, add semolina to the pan and mix everything well for 2-3 minutes
- Next, add the oats powder and mix well for another 2 minutes
- Take the mixture in a bowl and allow it to cool. Add curd, chopped coriander and salt and mix thoroughly. Set the bowl aside for about 20 minutes
- After 15 mins, boil water in the idli steamer and grease the idli plates with oil
- After 20 minutes, add eno salt or citrus acid and water to the bowl and mix well in clockwise direction. The mixture becomes fluffy
- Pour this mixture in idli container and steam it for another 20 minutes.
- Serve with chutney or sambhar
