  1. Make ready 3 Cups calabash grated
  2. Get 2 Cups sugar

Instructions to make Calabash Marmalade:
  1. Mix the grated Calabash (dhodi) And Sugar together then cook on low heat, till water evaporates and forms a thick syrup
  2. In a non stick pan, warm up the ghee and add in all dry ingredients till well mixed and slightly golden
  3. Throw the pan ingredients into the Calabash syrup and cook for another 5 minutes. Can add in dried prunes (Allobukhara)
  4. Turn off heat and enjoy with a slice of bread or Naan.
