The ingredients needed to make Dal baati churma:
- Prepare panchmel dal:-
- Get 50 g arhar (toor) dal [split pigeon peas]
- Prepare 50 g masoor dal [indian brown lentils]
- Get 100 g moong dal [split mung beans]
- Prepare 100 g urad dal [split and dehusked black gram lentils]
- Prepare 50 g chana dal [split chickpeas]
- Make ready 1 tomato (finely chopped)
- Prepare 1 onion (finely chopped)
- Get 1 green chilli (finely chopped)
- Get 1 tbs ginger (finely chopped)
- Prepare 1 tbs garlic (finely chopped)
- Make ready 1 tbs fresh coriander leaves (finely chopped)
- Take 1 tsp jeera (cumin powder)
- Take 1 tsp haldi (turmeric powder)
- Take 1/2 tsp red chilli powder
- Get 1 tsp dhaniya powder (coriander powder)
- Make ready 1 tbs ghee/clarified butter
- Take 1/2 tsp garam masala (a mixture of ground Indian spices)
- Prepare 1 pinch hing (asafoetida)
- Prepare Baati:-
- Prepare 500 g wheat flour
- Get 1 tsp salt
- Prepare 4 tbs ghee/clarified butter
- Take 1 pinch baking soda
- Take As required water to make a dough
- Take As required ghee/clarified butter for frying
- Take Churma:-
- Get 2 baati (fried)
- Take 100 gms powdered sugar
- Get 1 tbs mishri (rock sugar candy)
- Take 1 tsp cardamom powder
- Take As required finely chopped dryfruits:- almonds, cashew, pistachio etc
Baati is a hard bread made up of wheat flour commonly known as aata. Once pressure releases, mash it well with a laddle and set aside. Diya Aur Baati Hum Title Song Performed by Shubha Mudgal & Kailash Kher. Dal Batti is special Rajasthani Dish.
Steps to make Dal baati churma:
- To make panchmel dal, wash all the five dal and soak them for 2 hours.
- Now cook the dal in pressure cooker. After a whistle cook for another 5 mins on sim.
- Now take another pan (kadai). Add 1 tbs ghee, cumin and asafoetida and saute onion, garlic and ginger till golden brown.
- Add turmeric powder, coriander powder, red chilli powder, tomatoes and green chilli in the same pan and saute. roast the spices well.
- Now add the dal in the pan, add some water and stir for 5 more minutes on sim. add garam masala and coriander into it. serve it with a spoon of ghee.
- To make baatis add flour, salt, ghee, baking soda and make a dough and divide in into 5 equal parts.
- Take 1L water in a pan and boil. take 1 part of the dough and smooth it by hands and press in the center with thumb and make a depression.
- Cook these dough balls in boiling water till bubbles appear on their surface. after cooking they will start to float on the surface of the boiling water. take them out of the boiling water and heat the oil for frying.
- Cut the boiled dough balls into 2-4 pieces and fry til golden brown on sim. they are ready to serve with the panchmel dal.
- To make churma take the cooked baatis and grind it in mixture grinder.
- Take another pan and add 2 tbs ghee and ground baatis into it. roast till golden brown. put it aside and let it cool.
- Add cardamom and rock candy sugar (mishri) into it and mix well. garnish with dryfuits and serve with dal and baati.
- Serve dal baati churma with a drizzle of ghee over baatis and dal.
