  10. Make ready 2 whole star anise pods

  12. Get 2 tsp coriander seeds
  13. Take 2 tsp paprika
  14. Make ready 2 beef stock cubes
Instructions to make Chef Lesego's Oxtail Stew:
  1. Coat your oxtail with flour
  2. On medium heat, warm your pan/pot then add canola oil.
  3. Once hot, add your oxtail. Brown your oxtail.
  4. Set the oxtail aside once you're done browning it.
  5. Put your chopped vegetables in the same pan/pot. Fry them until soft. Then add your mushrooms. Fry for a few minutes.
  6. Add a can of tomato puree to your mix. Cook on high heat until the puree browns and thickens.
  7. Add garlic, 3 spice berries, whole star anise pods, cloves, coriander seeds and paprika. Cook for further minutes then add back the oxtail.
  8. Add to cups of beef stock and mix. Then add 1ltr of warm water and mix.
  9. Cover the pan/pot and let the oxtail simmer for 1 and half hours.
  10. Uncover the lid and let it simmer for 30 minutes uncovered.
  11. Serve.
