  14. Get as needed Mint-Coriander chutney (for garnish)

  4. Preheat oven to 180-degree Celsius for 10-15 minutes. Line a baking tray with foil and grease it with butter.
  5. Place the chicken pieces on the tray and bake for 20 minutes. Bast with melted butter once it starts browning.
  6. You can also cook them in a skillet or pan. Just heat some oil in a pan over medium heat. Add the chicken pieces and cook each side for 5-7 minutes or until it gets a golden colour.
  7. Sprinkle freshly chopped coriander leaves and serve hot with onion rings and mint-coriander chutney. Enjoy!

This oven-roasted chicken can also be spatchcocked and barbecued. If you don't like it too hot, adjust the amount of chillies in the piri-piri marinade. Add half the piri-piri sauce, spreading it evenly over the chicken. Seal and marinate in the refrigerator for at least one hour. Because this Piri Piri Chicken is fiery hot.
