There's just no other way to ensure the chorizo is In the past, when I've fried the chorizo and added the pasta in with the chorizo to cook, I've found the salty-spicy flavour leaches. Pasta in a salad is one of my favorite ways to enjoy it; add a bit of crispy chorizo, some sweet peas and fresh tomatoes and you have a winner on your hands! So I decided on a dish that doesn't need to be heated all; this delicious pasta salad.
Instructions to make Michelle's Tomato, Mascarpone and Chorizo Pasta:
- Boil 500g of Penne pasta in salted water.
- Whilst the pasta cooks, fry onion and garlic until translucent, in 2 tablespoons of oil, preferably Olive Oil.
- Add the sliced Chorizo and gently fry for 3 minutes and until the oil turns orange in colour.
- Stir in a 440g of good quality chopped, tinned tomatoes. Also add the dried herbs and sugar.
- Allow the sauce to simmer gently for 5 minutes before adding 3 dessert spoons of mascarpone and a handful of grated Parmesan. Simmer for a further 5 minutes till the sauce reduces a little.
- Drain your pasta well then add to the sauce mixing well till all pasta is submerged and coated in sauce.
- Serve with fresh crusty bread and butter. And enjoy!
And for dessert I will bring blue berry cheesecake… A deliciously creamy tomato mascarpone pasta sauce with mascarpone and parmesan cheeses. Can be served chunky or smooth for different Tomato Mascarpone Pasta Sauce. I love creamy, cheesy pasta sauces. But I don't always love the ones out of a jar. Or even the fresh ones out of a tub.
