Instructions to make Thai Chicken:
  1. Before starting to cook, assemble all your ingredients, prepping and measuring as necessary.
  2. With a spoon, scoop out the seeds of each cucumber half. Quarter the halves, thickly slice on the diagonal and set aside.

Return the chicken to the skillet and simmer just until the chicken is cooked through and the vegetables are crisp-tender, about 3 minutes. Bring to a boil, stir in the mint and cornstarch mixture and cook, stirring constantly, until the mixture is slightly thickened, about 1 minute.
  6. Divide the chicken mixture among 4 plates and serve. Delicious with jasmine rice.
