  1. Take 6 # beef short ribs (I use 4# short and 2# back)
  2. Get 1 tsp dried thyme

  15. Get Zest and juice of 1 lime (2 tsp zest, 2 tsp juice)
  16. Get 2 Tbsp butter
  17. Take 2 Tbsp maple syrup

Season and sear the meat over a high heat. Next, immerse the short ribs either partially or fully in a flavorful liquid in an oven safe pan. Cover and cook for a long period of time (usually about two and a half hours), until the meat is tender. Sprinkle ribs with salt and pepper.

Instructions to make Short ribs:
  1. Preheat oven to 325°
  2. Rub the ribs on both sides with S&P and thyme.
  3. In a large roasting pot, add 1/2C water, the chilies and sliced ginger. Put the seasoned ribs in the pot and cover tightly. Bake in oven for 2 1/2 - 3 hours.
  4. For the hop: In a food processor, combine the serrano chile, onion, smashed ginger and salt until smooth. Melt the butter in a large saute pan and add the onion mixture. Cook until caramelized. Now add the beer, molasses, brown sugar and maple syrup. Cook on simmer for 10 minutes until thickened. Add the cilantro, lime zest and juice.
  5. Raise the oven temperature to 450°. Brush the 'hop sauce' all over the ribs every 2 minutes until you have used it all; about 10 minutes. There should be a nice dark glaze on them.
  6. Serve with egg noodle pasta or rice. I also added sautéed mushrooms, red pepper strips and asparagus.

In a large skillet, heat oil over medium heat. Short ribs benefit from long, slow simmering, whether in the slow cooker, in the oven, or on the stovetop. Or, if you need tender short ribs in a hurry, cook them in a pressure cooker. Many long-cooking recipes can be cooked in a fraction of the time in the Instant Pot or pressure cooker. Season short ribs with salt and pepper.
