- Prepare 1.5 oz tofu (extra firm, firm or soft as desired)
- Take 1 tomato
- Take 2-3 Basil leaves
- Make ready Olive oil
- Make ready Salt
- Get Black pepper

This Tomato and Silken Tofu Caprese Salad recipe is a take on a recipe in David Chang's Momofuku cookbook for cherry tomatoes and silken tofu in a soy vinaigrette with shiso leaves. It's Chang's version of a caprese salad, and it's delicious (and you can see photos of it being made here ). Replace the mozzarella with tofu to make this caprese salad completely vegan, and absolutely refreshing!
Instructions to make Tofu Caprese:
- Remove water from tofu as much as possible and slice when ready. (You can wrap tofu with kitchen papers and let it sit for an hour. Add weight if necessary.)
- Slice tomato.
- Place sliced tofu and tomato alternately on a plate.
- Spray olive oil over and add salt & pepper.
- Break basil leaves with fingers and sprinkle over.
- FYI - I used this extra firm tofu from Trader’s Joe.
- FYI - olive oil spray is just for convenience. Of course regular olive oil is as good!
Cut tofu to desired size and shape; set aside. In a small pot add vinegar and sugar and set it to medium-high heat.. It's a delicious and refreshing Caprese salad made with fresh basil, tomatoes and tofu "mozzarella cheese". Even if you are not vegan, this healthy salad is also great to help weight loss in summer.
