Making this Toasted Muesli is a fairly straightforward process. You just need to combine the dry ingredients and simmer the other ingredients for one minute, before combining everything and toasting. It takes about an hour to toast your homemade muesli, and you'll need to remove the muesli from the oven once or twice and stir during the process. I often just buy a pack of mixed seeds.
Steps to make Homemade Toasted Muesli:
- In a big mixing bowl, add rolled oats, chopped almonds, chopped cashew nut, pepita, ground cinnamon, honey. Mix them well. Melt the coconut oil and put it to the mixture. Mix well everything.
- Spread the mixture evenly on a baking tray lined with parchment or baking paper. Put the tray in the preheated oven at 160 C and roast the mixture for 30 minutes stirring in between after every 10 minutes.
- After 30 minutes, the mixture is nice and golden. Remove from the oven and let it cool on the tray. Once the mixture is cooled, add chopped apricots and raisins. (you can also add any dried fruits like apple, cranberry, kiwi of your choice)
- Mix well. The toasted muesli is ready. It can be stored in zip lock bags or an airtight container for 15-20 days.
- The homemade toasted muesli is ready to serve. Enjoy it with milk or yogurt.
Spread the oats, barley flakes, rye flakes, flaxseed meal, pumpkin seeds, almonds and hazelnuts on a large rimmed baking sheet and bake, stirring once, until. Mix all the dry ingredients, including the dried fruit, in a bowl until well combined. Thanks- I prefer a non toasted muesli but found it a great recipe & just omitted the oil & honey.
