Gulab jamun, kala jamun, Rasgulla, Coconut ladoo and Jalebi are a few desserts that my folks are too much fond of. Make the jamuns a day before and keep them soaking in the sugar syrup in the refrigerator. These kala jamun stay well for about a week In the fridge.

The ingredients needed to make KALAJAMUN jaggery OR Sugar:
- Prepare 200 Gm Paneer
- Take 200 Gm Khoya
- Prepare 100 Gm Refined Flour
- Get 50 Gm Sooji
- Take 2 Tbsp Milk Powder
- Take 4-5 Sliced Almonds
- Get 1/4 Tsp Powder Cardamon
- Prepare as needed Saffron strands
- Get 4-5 Sliced Pistachios
- Make ready as needed Ghee for frying
- Take for syrup
- Get 750 Gm Sugar (if u want to make in sugar syrup)
- Prepare 300 Gm Jaggery (for making jaggery syrup)
It has a darker color, is chewy on the outside and soft on the inside. Jaggery is an unrefined sugar made by boiling concentrated sugar cane extract until it hardens. But if you're going to have Sugar, replacing it with jaggery or dates would be my go-to option. Far lesser chemicals, far more nutrients, and perhaps some magic formula that has many ancient cultures.
Instructions to make KALAJAMUN jaggery OR Sugar:
- Grate paneer, Add khoya, Suji, Milk powder in a container and mixture well. Add 1 st ghee and 2 tbsp milk to it. Make a smooth and soft dough out of it.
- Make medium size balls out of the dough. See to it that no cracks are formed.
- Fry this balls on low flame in ghee.
- Fry till dark in colour. To get perfect dark colour add some sugar to the dough.Let the balls cool a bit and then add in syrup.
- Take Sugar in a container add water to it and cook on high flame for 5 to 7 minutes. Add few strands Saffron and cardamom powder to it.
- If making Jaggery syrup. Take jaggery in a container and water and cook for 5 to 7 minutes on medium flame
- Kalajam in sugar syrup
- Kalajam in Jaggery Syrup
- Soak them for 4-5 hours before serving. Can be served hot or after refrigerating for 2 to 3 hours
Today, the jaggery benefits being claimed are that it's a low glycemic sugar alternative that's actually healthy for you. Regular table sugar has virtually no mineral or vitamin content. Jaggery has some, but with exception of magnesium, the amounts provided are probably too low to be very beneficial for. Kala Jamun-Black is beautiful as you will see when you fry regular gulab jamun till they turn a fierce black. This has a special place in all occasions.
